Showing You How To Give Up Sodium Without Giving Up Your Life
These make a great side dish with almost any kind of meat, but I have to admit to having them for breakfast a time or two also. Maybe that's just because I get desperate when the garden is really producing zucchini.
4 c Zucchini,Shredded
Wash zucchini, trim the ends. Grate or grind into a bowl. Squeeze dry. In a bowl, combine the zucchini and all the other ingredients except the oil. Heat the oil in a heavy skillet over medium heat. Drop zucchini mixture by heaping tablespoons into hot oil. Flatten them a little, fry until golden brown on bottom. Turn and brown second side. Drain on paper towels. (If mixture is thin, add more flour.)
