Sun-Dried Tomato Focaccia Bread


This is good without the tomatoes also. We made sandwiches with a grilled split chicken breast, grilled onions, mushrooms and peppers and a slice of Swiss cheese, running the whole thing under the broiler to melt the cheese. I actually used a sun-dried tomato pesto that I found at Safeway here, which added a little extra flavor.

3/4 c Water
2 T Olive Oil
1/4 c Sun Dried Tomatoes,Finely Chopped
2 c Bread Flour
1 T Sugar
1 1/2 t Yeast
2 T Parmesan Cheese,Shredded

Place all ingredients except cheese in bread machine and process on dough cycle. At end of cycle remove dough. Pat into 12 inch circle of greased baking sheet. Cover and let rise until doubled, about 30 minutes. Sprinkle with cheese. Bake at 400 15-18 minutes or until edges are golden brown.
