Sticky Chicken


This unusual recipe is a variation of one posted in the Busy Cooks forum on About.com. The spices give it a flavor similar to the carryout rotisserie chickens. The slow cooking method leaves it meat very juicy and gives it time to absorb more of the flavor. We've found that gravy made just from the pan juices is spicier than most people like, but that it is very good when mixed with an equal part of chicken broth.

1 whole chicken, the larger the better
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon chili powder

Combine the spices in a small bowl. Remove the giblets and neck from the chicken. Wash and dry the chicken inside and out. Rubs the spices into the chicken inside and out, making sure to rub it deep into the skin. Place the chicken in a sealed zipper baggie and allow to sit in the refrigerator overnight.
