Peach Muffins


A good way to start a cold Saturday morning ... or a warm one.

1 c Flour
1/2 c Oatmeal
1/4 c Sugar
2 1/2 t Sodium Free Baking Powder
1/2 t Almond Extract
1/4 c Egg Substitute
3/4 c Skim Milk
1/3 c Canola Oil
1/2 c Peaches
2 T Sugar
1/2 t Cinnamon

Stir together dry ingredients. Make a well in the center. Stir together milk, egg, oil. Add all at once to dry ingredients. Stir until just moistened. Stir in peaches and extract. Spoon in greased or paper lined muffin pans. Mix together cinnamon and sugar. Sprinkle over top. Bake at 400 for 20 minutes.
