Kate's Ginger Crinkles
This recipe from subscriber Kate come from an old cookbook (the one with the red and white checked cover ... she couldn't recall the name and neither do I) updated to reduce the sodium. This recipe makes a soft cookie, not like a ginger snap.
2 1/4 c Flour
Stir together the first 4 ingredients. Combine the remaining ingredients and beat well. Add dry ingredients to beaten mixture, beating well. Form 1" balls. Roll in granulated sugar, if desired; place 2 inches apart on an ungreased cookie sheet. Bake in a 375 oven about 10 minutes. Makes 48
