Injector Chicken


This is a way to add flavor to your roast chicken, giving the same kind of impression that long marinading would. The combination of the spices injected into the meat and rubbed on the skin, combined with the slow roasting, makes this one of the juiciest, most flavorful chickens you'll find. You can find injectors at stores with a large selection of kitchen gadgets or buy one online.

1 Roasting Chicken
1/2 c Low Sodium Chicken Broth
1/2 t Garlic Powder
1/2 t Onion Powder
1/4 t White Pepper
1 t Paprika
2 T Honey
1 T Oil
1 t Paprika
1 t White Pepper
1/2 t Onion Powder
1/2 t Garlic Powder

Combine broth and first 4 spices. Inject mixture into chicken, placing about a quarter into each side of the breast and the remainder in the legs and thighs. Roast at 300 until done, about 2-2 1/2 hours. Combine honey, oil and remaining spices and brush on chicken the last half of the cooking time.
