Herbed Pizza Crust


Pizza doesn't HAVE to be bad for you ... at least not in the same class as your typical carry out or home delivery stuff. By making your own crust and sauce you can cut out a good portion of the sodium. I haven't found a really good solution for the cheese though. In fact cheese is probably one of my biggest weaknesses. The only truly low sodium one I can find here is Alpine Lace Swiss, at 45 mg per slice. Ordinary store brand Swiss is actually not bad, only 60 mg. Now I happen to LIKE Swiss cheese, but it just isn't right for some things like pizza and tacos. The mozzarella I use is 180 mg per 1/4 cup, so you won't want to overdo it. Cover if with lots of veggies, sprinkle a little cheese on your part and be more generous with the rest of the pie if you are sharing it with someone on a less restrictive diet.

2/3 c Water
2 1/4 c Bread Flour
1 t Sugar
1 t Rosemary
1 t Oregano
1/4 t Black Pepper
1/4 t Thyme
2 t Yeast

Place ingredients in bread machine in order specified by the manufacture. Set on dough cycle. If you don't have a bread machine, you'll need to go through the heat the water to 100-115, mix, knead til smooth, cover and let rise bit. When dough is done, remove from machine, let rest about 3 minutes (this makes it easier to stretch ... something to do with allowing the gluten to break down ... *shrug*). Pat and stretch the dough as much as it will without tearing. Let rest 3 minutes longer. Continue stretching until it forms a 12-14 inch circle. Spray a pizza pan or cookie sheet with vegetable oil spray. Press dough onto pan. Cover and let stand 10-20 minutes until puffy while oven preheats to 500 degrees. Prick dough with fork every couple inches. Bake 4-5 minutes, until top is dry, but not golden. Remove from oven, add sauce and toppings as desired. Bake another 10-12 minutes, or until edges are brown and cheese melted.
