This is a variation of the andouille recipe. It produces a lower fat product that can be browned and crumbled into various dishes to give them that little extra bit of Cajun flavor.

1/4 t Black Pepper
1/4 t Cayenne
1 t Liquid Smoke
1/4 t Paprika
ds Thyme
ds Sage

Mix spices thoroughly into turkey.
