Baking Mix

This can be used in any recipe that calls for bisquick or a similar baking mix. I usually make it with 2 cups whole wheat flour, but you could use all white flour. I usually use butter flavored crisco, but any shortening that doesn't require refrigeration will do. If you use regualr margarine or butter, it will need to be refrigerated. The nutritional information is based on a half cup of the mix, which may be more than a serving would contain.

6 c Flour
3 T Sodium Free Baking Powder
1 1/4 c Shortening

Stir flour and baking powder together. Cut in shortening with pastry blender or 2 knives until mixture resembles coarse crumbs. Store in a container with a tight fitting lid.
